I consider Gelato Beach to be a very beautiful areas, as well as as exotic as can be; http://www.vgmaps.com/Atlas/GCN/SuperMarioSunshine-GelatoBeach.jpg

Sirena beach is also very beautiful; http://media.giantbomb.com/uploads/0/7464/941916-590px_sbeach_super.png

Super Mario Galaxy didn't have too many (or any at all) great landscapes, because It's in space.

To be honest, the Mario universe is one of the most beautiful one could ever dream of, It's absolutely stunning, I would like to live in it.

Oblivion - Photo realistic...expansive...climate / time changing...beautiful.........like none other I have seen.

I liked oblvion too, I just wish they had hired a few more voice actors lol. Fallout 3 is quite similar (although a bit more futuristic).
