Banana Bora Bora - 2 deserts, made at your table, $11.00 at Trader Vics in The Nuggett in Sparks, NV
A dessert chef rolls a cart to your table....lights a gas stove top...places a sauce pan on top. He then puts out 2 large dessert glasses and scoops out Macadamia Nut Ice Cream (kept cold by Dry Ice...it makes a difference...the ice cream is rock hard and doesn't melt away later in the process). He slices a banana and places the slices into the pan. He then pours in brown sugar, some butter and some kind of Rum and ignites it. He stirs the mixture until the brown sugar fully caramelizes. He adds coconut shavings and scoops the mixture onto the ice cream. The taste is well remembered....I last had it almost 10 yrs. ago. I don't remember what I had for the main course....but I do remember THAT dessert
